Fukuoka’s Cuisine BARI-UMAKA !! (So delicious !!)

A customer who runs a sushi restaurant in New York is coming to Fukuoka in August, so we went to attend the visit accompanied by the president of our supplier in Fukuoka fish market!

The customer is a well-known Japanese chef in New York.

His knowledge of fish and its characteristics is so impressive, and we were left behind as he and President Higuchi were talking about fish.

It made me realize that I need to learn more and more.

 

One of the main things of his visit Japan was to eat the delicious cuisine of Fukuoka, so we visited six restaurants over the course of the two days and one night!

All of the restaurants were ones that he researched on SNS beforehand, and he decided that he definitely wanted to visit there.

After all, the restaurants chosen by the chef were all very tasty dishes, and I would not have known about on a normal trip.

Of course, I ate standard Nagahama ramen in the standard and went home.

The restaurant that impressed me the most among the various delicious dishes I ate was “Koi Hiromatsu”.

This restaurant raises its own carp. By raising them in ponds filled with the clean underground water of Chikushino, it can provide carp with no smell at all.

The owner is in the third generation, and only 23 years old! His restaurant has a very young and lively atmosphere.

You can eat not only farmed carp, but also eat Unagi no Arai (eel) and drink suppon’s blood.

Arai is the cooking method to wash well and then ice fish, which gives the fish a firm texture and is very satisfying to eat.

All of these dishes have a high quality of taste and are very rare, so if you like rare ingredients, or if you are feeling a little down and you want to be energic, this is the restaurant you should visit.

Of course, it's not all about eating!
